Beef Tenderloin Steaks with Gorgonzola recipe
Ingredients:
4 beef tenderloin steaks, 1 ½ inches thick.
1 tablespoon of extra virgin olive oil.
Salt and freshly ground black pepper, to taste.
¾ lb of Gorgonzola.
4 fresh sage leaves, thinly sliced.
Directions:
Allow the meat to rest for 10 minutes before beginning the rest of the preparation.
Place a large skillet over high heat. Once hot, using a pair of tongs and a folded paper towel, wipe the cooking surface with olive oil and place the steaks on the hot pan.
Caramelize the steaks, for 2 minutes on each side.
Reduce heat to moderate.
Season meat with salt and black pepper and cook for 4-5 minutes more on each side.
Preheat broiler to high.
Arrange the steaks on baking sheet and top each steak with 3 oz of Gorgonzola.
Place baking sheet 6 inches from broiler heat just long enough to melt the cheese.
Remove the steaks from the oven and top with slivers of fresh sage.
Allow to rest for 2-3 minutes, then serve immediately.
