Steak Diane recipe
Ingredients:
1 ½ lbs of sirloin steak.
½ teaspoon of mustard, dry.
¼ teaspoon of salt.
1/8 teaspoons of freshly ground black pepper.
1 tablespoon of chives, chopped.
1 tablespoon of lemon juice.
1 teaspoon of Worcestershire sauce.
3 tablespoons of Cognac, heated.
2 tablespoons of extra virgin olive oil.
Directions:
Preheat the olive oil 5 minutes at 375°F (190°C).
Meanwhile, wipe ½-inch thick steak with paper towels to remove excess moisture.
Mix the mustard, salt and black pepper, then sprinkle over one side of steak and rub in.
Brown steak in the hot olive oil, about 1 ½ minutes on each side.
Sprinkle with chives, lemon juice and Worcestershire sauce.
Just before serving, pour heated cognac over steak. Ignite.
Once the flames have gone out, transfer the steak to serving platter.
Spoon pan juices over meat and serve.
